Bansi is a traditional Indian wheat variety. Its grains are golden-brown and slightly harder and denser than regular wheat. It has a distinctive nutty taste and richer aroma, and its atta has a wholesome, slightly coarser texture.

Bansi atta makes rotis with a rich taste and aroma, with a slightly firmer texture than regular market atta. For softer rotis, knead the dough with lukewarm water and let it rest for 15โ€“20 minutes before rolling.
