Firstly, let us have a brief introduction of Gir Cow Desi Pure Ghee.
Trueway farms Gir Cow's Desi Pure Ghee is made from A2 milk of Gir Cows which are grass fed freely on natural farms and not cross breaded. These cows graze freely on farms in sunshine and their hump absorb sunlight during the day period. (Wondering why it is important to let them graze in the bright sunshine?) We'll give that answer too. Daily grazing of the cows by such means is a necessary step to get the healthy milk as well as for the health of cows.
In the evening, Milk is collected by hands after the share of the calves. The Milk is then directly boiled in clay pot over fire wood without any other process. This converts it into curd and then the curd is churned by hand process with wooden stick (called bilona method) to get butter (makhan). This butter is now melted on fire wood to get the Pure Desi Cow A2 Ghee.
Is there a difference between Organic Pure Ghee and other Ghee that is available in the market?
Yes, there is a difference. Desi Cow ghee melting point is 37 degree Celsius and human body temperature is 37.2 degree Celsius. This is only the ghee that melts below human body temperature while all other ghee melts at 40 degree Celsius.
Ghee made from milk which contains only A2 beta casein (protein) is called A2 ghee and which contains only A1 beta casein or both A1 and A2 beta casein is called A1 ghee. Only some native Indian breeds have A2 beta casein in their milk where as in India all commercial dairy products have A1 beta casein due to foreign breed and cross breed cows. This A2 cultured desi ghee is made by the Ayurvedic churned (Bilona) method at our organic certified Trueway farms. 30 Kg of curd is used to make 1 Kg of A2 cultured desi ghee and the curd is prepared specifically from the Gir Cow A2 milk.
Now as we have a few knowledges about the process of getting the pure ghee, let us learn some of its benefits.
Before going further, Remember the questioned that raised before about the sunlight and the cow's hump? Here is the answer:
Indian Desi cows have a hump passing through its backbone called ‘Surya Ketu Nadi’, which absorb the cosmic energy from the sun and moon. The solar rays produce golden salts in her blood and are present in her milk, ghee, curd and butter, which is responsible for its golden colour. This adds numerous health benefits to all the dairy products.
